Cherry ripens early and its season is short, therefore it is necessary to prepare it for the winter in the form of compote quickly, especially when the harvest of this berry is good. Compote is most often rolled up in 3-liter jars as the most convenient container and the ingredients in many recipes are designed for just such a container. Compote is prepared from ripe dark-colored fruits, as their taste is richer. The recipe is simple and quick, since the seeds are not removed and sterilization is not needed, it is only important that the cherries are freshly picked.

Before preparing the cherry compote, first prepare the jars according to the amount of your cherries. Rinse them with baking soda and sterilize in the oven. Boil the metal lids for a few minutes.

Carefully sort through the cherries and discard the damaged fruits, otherwise the compote will deteriorate. At the cherry, carefully so as not to damage the pulp, remove the stalks and then rinse it either under running water, or in a large basin, changing the water several times. Then put the cherries in a colander to remove excess moisture.

Put pure cherries in prepared jars, filling them by a third of their volume, which is the best option for compote.

Pour a glass of granulated sugar into each jar.

In a large saucepan, boil clean drinking water for the number of cans, taking into account that you need 2.5–2.7 liters of water per can. Then, carefully so that the jars do not burst, pour boiling water over the cherries in jars to the very top of the neck.

Then place them on the lids, checking that they are sealed securely. Wrap jars with cherry compote well with any thick blanket and leave overnight until it cools completely.

Cherry compote with stone is ready. Be sure to sign it (to the bank) and transfer it to storage in a dark place, because it is undesirable to store such a compote for more than a year.
