Compote is most often rolled up in 3-liter jars as the most convenient container and the ingredients in many recipes are designed for just such a container. Compote is prepared from ripe dark-colored fruits, as their taste is richer. The recipe is simple and quick, since the seeds are not removed and sterilization is not needed, it is only important that the cherries are freshly picked.

Carefully sort through the cherries and discard the damaged fruits, otherwise the compote will deteriorate.
