Preparing blueberries is a difficult and painstaking task. To make this process easier, pour the berries into a deep bowl. Sort out the berries, removing any spoiled or damaged fruit. After that, fill the berries with water. All the debris that could be in blueberries will float to its surface. Remove it with a clean piece of cloth. Leave the blueberries in the water for about 30 minutes. When the berries are infused, rinse them several times. Spread a tea or paper towel on the table. Pour blueberries on top of it. Leave it to dry. Before doing this, check the berries again for spoiled fruits.
We start sterilizing the jar. Rinse it well with baking soda first. Fill a pot with cold water and transfer it to the stove. Scald the jar and lid with boiling water. Then fill the kettle with water and put it on fire. When steam starts to come out of the spout of the kettle, place a can on it. Keep it in this position for several minutes. Then place the jar on a kitchen towel and let it dry.
Fill a small saucepan with cold water. Place it on the stove. Wait for the water to boil. After that, start adding granulated sugar in small portions. Stir the syrup constantly so that the crystals have time to dissolve. If you want to make the compote more concentrated, increase the amount of sugar. This compote can be diluted with water by increasing its amount. When the granulated sugar is completely dissolved, add a pinch of citric acid to the syrup and continue to boil it for 5-7 minutes. Turn off the stove and leave the sugar syrup on the stove. After that, strain it through cheesecloth to make the compote more transparent.
Transfer the processed berries to the jar. Pour the prepared sugar syrup over them and cover. After that, pour some water into a saucepan and put it on fire. Move the jar to a pot and leave to sterilize. This will take about 10 minutes. However, this time will vary depending on the size of the can. Then screw the lid back on. Spread a towel on a flat surface and place a jar of compote on it. Wrap it in a warm blanket and wait until it has completely cooled down.
