We start preparing compote by processing blueberries and oranges. Pour blueberries into a saucepan or large bowl. Sort the berries carefully, removing any spoiled or damaged fruit. Then pour warm water over the blueberries. All debris, leaves, as well as insects that could remain among the berries will float to its surface. Remove debris gently with a clean piece of cloth. Leave the blueberries in warm water for 30 minutes. After that, rinse the berries several more times. Spread a tea towel on a table or any other flat surface. Put the berries on it and leave them to dry.
Let's start sterilizing the cans. First, rinse the soda cans. Fill a small saucepan with water. We put it on the stove. We are waiting for the water to boil. We scald the jars and lids with boiling water. Further sterilization of cans will be done with steam. To do this, you can use a saucepan or kettle. Fill the kettle with cold water. Transfer it to the stove. Wait for the water to boil. Place the jar on the spout of the kettle so that it fills with steam. Keep it in this position for a few minutes. After that, move the jar on a towel, which must be spread out on the table in advance. It will dry out in just a couple of minutes.
Let's move on to making sugar syrup. For it we need water, granulated sugar and citric acid. Fill a saucepan with cold water and put it on high heat. We are waiting for the water to boil. Gradually add granulated sugar in small portions. Stir the syrup constantly to dissolve the crystals quickly. Add citric acid to the syrup. Stir it again. When the syrup is done, turn off the heat. Leave it on the stove for about 2 minutes. Then strain the sugar syrup. For this, you can use gauze or a sieve.
We fill the jars with blueberries and oranges. Fill them with hot syrup. We cover the jars with lids. Place a small piece of cloth on the bottom of the pan. We put cans of compote on it. Pour a small amount of warm water into a saucepan (not cold, cans may crack, from temperature changes) and move this structure to the stove. When the water boils, reduce the heat and leave the cans of compote in this position for 30-35 minutes. We seal them. We turn the cans over and put them on a towel. So the lids will be subjected to additional heat treatment thanks to the hot compote.Now you need to wait until they cool down. During this time, you can choose a dry and cool place in the house in which you will store the compote. When the jars are cool, transfer them to this place.
