Cooking process

step 1 out of 5
Before preparing the compote, we begin to process the blueberries. Pour the berries into a bowl or a large saucepan. To begin with, carefully examine the berries, removing spoiled fruits. So that the processing of blueberries does not take you a lot of time, fill them with water. All the debris that could remain among the berries should float to the surface. Remove it with a regular piece of clean cloth. Then change the water and leave the blueberries in it for about 30 minutes. When the time is up, rinse the berries several times. Spread a paper towel on the table and transfer the blueberries to it. Leave the berries to dry.
step 2 out of 5
While the blueberries are drying, we start processing the cans for our compote. First, wash them thoroughly with baking soda or regular detergent. We fill the pot with water. We put it on fire. Wait for the water to boil. Scald the jars and lids with boiling water. After that, we proceed to the steam treatment. We fill the kettle with cold water and transfer it to the stove. When steam starts to come out of the spout of the teapot, place the jar on it. Leave it in this position for about 5 minutes. Then transfer it to a kitchen towel.
step 3 out of 5
Now we need to prepare the sugar syrup. Fill a pot with cold water. Put it on high heat. When the water boils, start adding sugar to it. It is best to do this gradually, in small portions. Stir the syrup constantly so that the granulated sugar dissolves faster. When all the sugar has been added, reduce the heat. Pour vanilla sugar into the water to give the compote a sweet and pleasant taste. Stir the solution again. The last ingredient will be citric acid. Thanks to her, your compote will definitely stand up to winter and will not deteriorate. When the syrup is done, turn off the heat. Leave the pot on the stove for a few minutes. Then strain the solution using regular gauze.
step 4 out of 5
We fill the jars with blueberries. Fill them with sugar syrup and close the lids. We cover the bottom of the pan with some kind of rag. We put a jar on it and pour a little warm water (not cold, cans can crack, from temperature changes). Now you need to carefully transfer this structure to the stove. We are waiting for the water to boil. Reduce heat and keep the jar in this position for 35 minutes. After that, we take it out of the pan. We seal the jar. We cover the table with a kitchen towel and transfer the finished cans to it. We turn them over. Due to this position and hot compote, the lids will be subjected to additional heat treatment. We wrap the jars in a blanket or a large kitchen towel. It is necessary to wait until they have completely cooled down.During this time, decide on a cool and dry place in which you leave the compote. Move the jars to this location.
step 5 out of 5
Blueberry compote is ready. Thanks to the use of citric acid in this recipe, you can not be afraid that your compote may not reach the winter and deteriorate. The drink contains many useful substances that will support your immunity. Hurry up to buy the necessary products and start cooking!
