For compote, it is recommended to use fresh and ripe berries. If you plan on buying blueberries rather than picking them yourself, check the berry smell. If they have a sour scent, skip the product. Pour blueberries into a wide saucepan. Redefine the berries by removing damaged and spoiled blueberries. It is not recommended to use such berries in compote. In order not to spend a lot of time cleaning the berries from debris, fill the blueberries with water. All the leaves and insects that could be on the blueberries will emerge on its surface. Leave the berries in the water for about 30 minutes. Then rinse the blueberries several times. Spread a tea or paper towel on a table or other flat surface. Place the berries on top of it to dry completely.

The jar must be sterilized before use. For our compote, we need a small jar. Rinse it well with baking soda under warm water. After that, it needs to be rinsed several times. Fill the kettle with cold water. Put it on fire. When the water starts to boil, place the jar on the spout of the kettle so that steam flows into it. Then put the lid in hot water and boil it for 5 minutes. Place the jar on a kitchen towel and let it dry completely.
step 3 out of 6
Transfer the processed blueberries to the jar. Make sure that the jar and berries are free of any contamination or debris. Fill a pot with cold water. Put it on high heat. When the water boils, pour it over the blueberries. Cover the jar with a lid and set it aside for about 10-15 minutes. During this time, the berries will be sterilized, and the water will become a deep red color.

When the time is up, pour the colored water into a saucepan and put it back on the fire. Add sugar in small portions. Stir the syrup constantly to dissolve the sugar. Pour a pinch of citric acid into the resulting solution. Continue stirring the syrup constantly until the sugar crystals are completely dissolved. Then turn off the heat and leave the saucepan on the stove for about 3 minutes.
step 5 out of 6
Pour the berries with a prepared solution of sugar, water and citric acid. Place the lid on the jar and roll up immediately. After that, we need to turn the jar over and put it on the lid. Wrap it up with a blanket or large towel. Leave the jar in this position. It should cool completely. When this happens, remove the compote to a cool place. For example, in the closet. There the compote can be stored for a long time.
