Cooking process

step 1 out of 6
Let's start processing blueberries and cherries. This is the longest and most difficult process. To lighten it a little, pour the berries into two different basins. Fill them with water. First, see what kind of debris floats on the surface of the water. Remove various leaves that might get lost among the berries. Collect smaller debris with a small piece of cloth. Leave the berries in the water for about 30-35 minutes. When the time is up, rinse the blueberries several times. Examine the berries for damaged or spoiled fruit. Remove these berries from good blueberries. Spread paper towels on the table. Place blueberries on top of them and leave to dry. Do the same with the cherries. You can also use frozen berries for compote, but fresh fruits will make the drink more aromatic.
step 2 out of 6
When the cherries are dry, pits must be removed from them. This step is optional, so you can skip it. Remove the seeds from each berry using a special device or a regular pin.
step 3 out of 6
Jars for compote must be sterilized. First, rinse them well with baking soda or detergent. Heat some water and scald the jars with lids, boiling water. Further sterilization will be carried out using steam. To do this, you can use a saucepan or kettle. The main thing is for steam to fill the cans. After that, transfer them to a towel, which must be placed on the table in advance.
step 4 out of 6
Let's start making sugar syrup. For it we need water, granulated sugar, citric acid and vanilla sugar. We fill the pot with water. We transfer it to the stove. When the water boils, we begin to gradually add granulated sugar. Do it several times. Stir the syrup constantly to dissolve the sugar faster. Pour 2 tablespoons of vanilla sugar into the solution. This ingredient will give the compote a pleasant smell. Then add citric acid. Thanks to her, your compote will stand up to winter and will not deteriorate. When the syrup is completely done, turn off the heat. It is advisable to strain it with gauze. This will make the compote more transparent.
step 5 out of 6
We fill the jars with cherries and blueberries. Add some mint if you like. After that, fill them with a ready-made sugar solution. We tighten the lid. We spread a towel on the table and place the jars on it, having previously turned them over. So the covers will be subjected to additional heat treatment. Roll the cans into a blanket. Wait for them to cool completely. Be sure to pick a cool spot in your home. This could be, for example, a pantry.Transfer the compote there.
step 6 out of 6
The blueberry and cherry drink is ready. It combines incredibly rich taste and a lot of vitamins. This compote will support your immunity at any time of the year. It will appeal to both children and adults. Compote will be an excellent alternative to store-bought juices and fruit drinks. You should get all the ingredients you need and try to make it. Good luck!
