In addition to liqueur, wine and chokeberry jam, or chokeberry, you can prepare a tasty and healthy compote for the winter. This berry has a tart taste, so it is either blanched in salted water or kept in the freezer for some time, after which the bitterness and astringency go away and the berry becomes dessert. Compote is prepared simply by the method of a single pouring followed by pasteurization under a "fur coat".

First, carefully sort the chokeberry berries, removing small debris, twigs and stalks. Then pour them into a colander and rinse well under running water to remove a thin layer of wax plaque from the surface of the berry so that it does not provoke compote fermentation.

Pour the washed chokeberry into a saucepan, cover with clean water and blanch for 5 minutes over medium heat to remove the astringency of this berry.

Sterilize a 3-liter jar in advance by any method and boil the lid. Transfer the prepared berries to a jar and add the amount of sugar indicated in the recipe.

In a saucepan, boil the required amount of drinking water and pour boiling water over the chokeberry in a jar, filling it to the top of the neck. Immediately seal the jar tightly and check the sealing tightness. Then place it on the lid and cover it with a warm blanket overnight.
