Chokeberry compote with lemon in a 3-liter jar for the winter

Chokeberry compote is often supplemented with other fruits and citrus fruits, which pleasantly diversifies the taste of the drink, and the lemon will give not only aroma, but also sourness. For compote, this mountain ash is harvested in late autumn and after the first frost, when the berry loses its tart taste. This berry is not capricious, and the compote is well stored even in an apartment. Compote is prepared without reusable infusions and overcooking, which is very convenient.

First, prepare jars for harvesting rowan compote. Wash them with baking soda and sterilize with hot steam, although you can do it your way. Boil the lids in a ladle for a couple of minutes.

First sort out the blackberry berries and remove all damaged specimens. Then use small scissors to remove the stalks, being careful not to damage the peel. Pour the berries into a colander and rinse thoroughly under running water, and then dry them a little with a kitchen towel.

Transfer the prepared berries to sterile jars, filling them by 1/3 of their volume so that the compote does not turn out to be too saturated.

Rinse the lemon well and cut half of it into thin slices. Then transfer them to the jars to the black chokeberry. If you wish and for a fresh taste, you can put a sprig of mint in the jar.

Pour sugar into a saucepan and pour clean drinking water based on the volume of your workpiece. With continuous stirring until the sugar is completely dissolved, cook the compote syrup. Boil it for 3 minutes.

Pour the blackberry with lemon in jars with boiling syrup, filling them to the top of the neck. Immediately seal the cans of compote. Then put them on the lids and cover them with a warm blanket for a day. Transfer the cooled compote to the basement or closet for storage.
