Berries of black currant and strawberry, having their own taste and aroma, are good friends in an assorted compote. You can choose the ratio of these berries according to your taste preferences, but the proportion of sugar must be observed, otherwise the compote will not stand. For this preparation, choose dense and unripe fruits, then they will remain whole and beautiful in the compote.

For compote, take strawberries a little more than currants, otherwise, due to the large amount of ascorbic acid, it can make the compote sour.

Transfer the strawberries to a colander, and gently rinse with running water, and then remove the sepals from the berries.

Separate the currant berries from the twigs, rinse in the same way as strawberries, and leave in a colander to drain all the water.

Place the prepared black currants and strawberries in a sterile 3-liter jar. Put drinking water to boil immediately.

Then, carefully with boiling water so that the jar does not burst, pour over the strawberries and currants. Close the jar with a double clean polyethylene lid and leave for 20 minutes to infuse.

After this time, pour the water from the jar into a saucepan, and boil the syrup in it, with the amount of sugar indicated in the recipe. Refill the contents of the jar with boiling syrup. Boil the lid in clean water for 15 seconds and then seal the jar tightly.

Place the jar on the lid and cover it with a terry towel. After cooling completely, the polyethylene cover should be slightly retracted inward. Such compote will be well stored for several months, completely retaining the aroma and taste of fresh berries, only it must be stored in a dark and cool place.
