Blackcurrant and raspberry compote

Raspberries and black currants are the leaders in vitamin content among berries. Their combination in compote is very harmonious: currants give their sourness and light astringency to the liquid, and raspberries give the drink an extraordinary aroma. Cooking time: 30 min. Servings: 6.

Sort out the black currants, discard the rotten and suppressed berries, cut off the tails of the berries with scissors and rinse them with water. To do this, the currants must be poured several times with cold water so that small debris floats to the surface. Drain the liquid with litter.

It is better to look for raspberries for compote and choose the sweetest in order to balance the sour taste of currants. Place the raspberries in a sieve and gently rinse them with water at minimum pressure, so as not to crush the delicate berries.

Put black currants on the bottom of a stewpan with thick walls and bottom in one layer, pour water over.

Place the saucepan with berries on the stove and bring the water to a boil.

When the liquid in the pan boils, you need to add the raspberries, carefully pouring them into boiling water so as not to burn yourself.

After adding raspberries, immediately add granulated sugar to the compote and mix everything vigorously with a spoon. Cook the assorted berries for about 5 minutes, reducing the heat to medium.

After 5 min. boiling, increase the heat, bring the mass to a boil and remove the stewpan from the stove.

Cool the compote at room temperature, then put in the refrigerator. The berries can be left in the drink, or you can strain the compote through a sieve or gauze folded in several layers, squeeze out all the juice from the berries, and discard the cake.
