Cherries and currants in compotes are tasty on their own, but in tandem they will make a drink with a new taste and more useful. Having tried once to make an assorted compote, you will be convinced from your own experience that you can more often combine various berries and fruits in a compote. These berries are taken in equal proportions for the drink, and more sugar is added than usual. Prepare compote with a single filling and subsequent pasteurization under a blanket for 2 days. The compote is stored well.

First, prepare the cherries and black currants for canning. Sort the berries, separate the currants from the branches (if you wish, you can leave the berries with tassels), remove the stalks from the cherry. Then rinse the berries well in a colander and leave for 10 minutes to allow excess moisture in the glass. Be sure to weigh the berries and sugar according to their quantity in the recipe.

Thoroughly rinse 3-liter jars with the addition of baking soda and sterilize them in your usual way, because the compote is prepared without sterilization.

Boil metal lids for 5 minutes in clean water.

Pour pure currants and cherries into sterile jars and immediately add the amount of sugar indicated in the recipe to them. The compote will turn out to be a little concentrated, so dilute it with water before drinking.

Boil clean drinking water or spring water in a saucepan, if possible.

Then pour boiling water over the berries with sugar, filling them to the top of the neck. Roll up the banks immediately. Check the seaming tightness, and shake the cans a little to dissolve the sugar.
