Wild apricot compote

Wild apricot compote is a tasty and healthy drink. Having opened a jar of such a compote in winter, you can enjoy not only delicious fruit lemonade, but also use the apricots themselves for making a pie, filling for buns or croissants.

For the preparation of seamers, we take only ripe apricots, it is necessary to look through that they are all of good quality. We wash the apricots well and put them in pre-washed and sterilized jars. Each jar must be at least 1/3 full of apricots.

Pour boiling water over the apricots and leave for 15-20 minutes so that the apricots are well steamed.

After that, cover the jar with a special lid with holes and pour the water from the jars back into the pan, put it on fire and add sugar. Bring the syrup to a boil.

Pour hot syrup into jars and tighten them with boiled lids. Turn the jars upside down, cover with a terry towel and leave to cool completely at room temperature. Then we put the jars in a cool dark place for storage.
