Pear compote with orange for the winter

Orange blends with almost any fruit, giving them an appropriate citrus flavor. It refreshes and gives a special mood. To get the most out of the orange, we recommend soaking it for a short while in hot water - this will reveal the taste of the pulp, and a specific bitterness will come out of the peel. Pears, on the other hand, should be chosen from dense, hard varieties so that they retain their shape well and do not make the drink cloudy. The amount of granulated sugar is indicated approximately. If the fruit is sweet, you can reduce the volume to your liking.

Before preparing the compote, the fruit must be well prepared, since the sterilization of the rolls is not provided. We wash the pears thoroughly in running water, using a soft bristled brush if necessary. Wash the orange in hot water and pour boiling water over it. We stand for three minutes and drain the water. Cut the prepared pears into transverse circles one centimeter thick. Cut out the traces of the ovaries and stalks. We also cut the orange into circles of the same thickness. If possible, remove and discard the bones.

Banks and lids are pre-washed with soda solution and sterilized in the usual way. We put pear circles in prepared jars. Bring water in the specified amount in a separate container to a boil and pour pears in jars into it. Leave the fruit to steam in boiling water for twenty minutes. After the specified time has elapsed, pour the water from the cans back into the pan, leaving the pears in place. For convenience, you can use a special cover with holes.

Put orange mugs in jars for pears. Pour granulated sugar on top, distributing its amount evenly over the jars. Put the drained water in a saucepan on the stove and bring it to a boil again. Pour fruit and sugar in jars with boiling liquid.

Immediately after filling, we roll up the cans with lids using a special device. We turn the seams upside down to check the tightness. We wrap the compote in a warm blanket and leave it in this position to cool slowly - this way the workpiece will pass the stage of passive sterilization. After cooling, the jars can be stored in a cool, dark place.
