Irgi compote with orange for the winter

First, the orange is steamed with boiling water, cut into slices and placed in a jar along with berries and lemon. Everything is poured with boiling water, and then poured into a saucepan, where it is cooked with sugar. The syrup is poured into jars and rolled up. The result is a refreshing drink with a citrus aroma.

Transfer the washed orange into a deep container and pour boiling water over it. Let it steam for about two minutes.

We cut it in half, and then cut it into thin semicircular slices.

First we sort out the berries of the irgi, getting rid of twigs, leaves, rotten fruits and other debris. Rinse them thoroughly under cool running water and put them in a colander so that all the liquid is glass. Next, take a clean three-liter jar and fill it with irga. Put orange slices on top. Cut half the lemon into two parts and put it in the jar as well.

Pour boiling water over the contents and let stand for about 10 minutes to make a decoction.

We put a lid with holes on the jar and pour the liquid into a deep saucepan. This can also be done with a sieve. Put the pan on fire, add granulated sugar and bring to a boil. Let it simmer for about 2 minutes, until the sugar is completely dissolved.
