Irgi compote with citric acid for the winter

The berries are thoroughly washed under water and transferred to a jar. Then sugar and citric acid are added to them. Everything is poured with boiling water, and the cans are twisted with lids. They turn upside down and cool down. Then they go to the cellar for storage.

To begin with, we sort out the berries of irgi well, getting rid of twigs, leaves and rotten fruits. Then we rinse under cool running water and put it in a colander. We are waiting for all the water to drain.

We sterilize the jars in a suitable and convenient way. We fill them with berries by about 1/3.

We pour granulated sugar into each jar and add a pinch of citric acid.

In a deep saucepan, boil water over a fire and pour its berries with sugar up to the neck of the jar.

We twist them with seaming caps and turn the cans upside down. We wrap it in a warm blanket and let the compote cool completely. Then we send it to such a dark, cold place as a cellar or basement for storage. We open the compote in winter and pour it into glasses. Bon Appetit!
