Forest strawberry compote

Anyone who has ever harvested forest strawberries for the winter knows that cleaning these berries from sepals is a real feat. They adhere tightly to the surface of the strawberry and are difficult to separate. We suggest using berries for compote together with sepals - this will not affect the taste and aroma of the finished drink at all.

We sort out forest strawberries from random debris. We discard the defective copies. Cut off the stalks, if they remain. Sepals are not separate. We place the berries in a colander and rinse them thoroughly under running water. After rinsing, let the excess moisture drain.

To prepare the syrup, pour the specified amount of water into the container and add granulated sugar. Heat the mixture to a boil, cook the syrup with stirring for a couple of minutes.

Pour the prepared berries into a pre-sterilized three-liter jar. Fill them with hot syrup. We roll up with sterile lids. We turn the cans upside down to check the tightness and wrap them with a blanket to cool slowly. We put the cooled jars in a cool dark place for storage.

The finished compote turns out to be quite concentrated. When serving, it can be diluted with boiled water to the desired taste.
