Strawberry compote for the winter without sterilization

We offer you the easiest and fastest way to prepare strawberry compote for the winter, without wasting time for sterilization. We just heat the berries right in a saucepan with syrup and close them in jars - it couldn't be easier. Compote according to our recipe turns out to be moderately sweet, with a rich strawberry taste.

For the compote, we chose dense, unripe strawberries, soaked them for 5 minutes in cool running water, so that all the sand would come off the berries well and settle to the bottom. Then they rinsed them in a colander and left for 10 minutes to drain the water. Then the sepals were removed from the berries. The compote jar was rinsed well with baking soda and rinsed with water. The jar was sterilized over steam for 3 minutes.

Pour water into a saucepan and put on fire. Bring it to a boil.

Gently dip the colander with berries into a pot of boiling water for 2-3 minutes.

When the berry warms up well, we rake the water in the pan with a colander a couple of times so that the whole berry is dipped in boiling water, and we take out the colander with berries from the pan, hold the colander over the pan a little so that all the water is drained from the berries.

Spoon the berries from the colander into the pan, trying to pick them up from the colander with a spoon as carefully as possible, since after heat treatment the berries have become soft.

Add sugar to a saucepan with compote and bring the syrup to a boil over medium heat.

While the syrup is boiling, boil a little water in a separate saucepan, put the lids in it and let them boil for 1-2 minutes.

As soon as the syrup boils, remove the resulting foam from it and pour the syrup into a jar of berries to the very top. If you don't have enough syrup, you can add boiling water from the kettle.

We close the jar with a lid, turn the jar upside down and leave the compote at room temperature until it cools completely.
