Today we will prepare a strawberry compote for the winter with the addition of citric acid, which is a natural preservative and will add a slight sourness to our sweet compote.

Rinse ripe strawberries in a colander under a stream of cool running water, let drain for 5-10 minutes. After that, remove the sepals.

We wash the jar for compote well with baking soda, rinse with warm water. We fill the jar with strawberries.

Pour water into a saucepan, put on fire and bring to a boil. Pour boiling water into a jar with berries and cover with a lid. Leave the compote to infuse for 12-15 minutes.

After the liquid has acquired a rich red color, put a lid with holes on the jar and drain the water back into the pan. We put on fire, bring to a boil, boil for 1 minute and pour again into the jar. We cover the jar with a lid and once again leave the compote to infuse for 10 minutes.

Then pour the water into a saucepan, add sugar and bring to a boil. Add citric acid to a jar of berries and pour hot syrup. Close the jar with a boiled lid and turn it upside down.
