It is curious that zucchini reliably absorbs the taste and aroma of related products, which is why it is used from soups to desserts. In this recipe, we prepare compote from zucchini, and red cherry plum will act as the "supplier" of taste and aroma. The indicated amount of ingredients is calculated for the preparation of one liter of compote.

We wash and dry the cherry plum fruits. You do not need to remove the bones.

My zucchini. If the fruits are ripe and the seeds have become coarse, they must be removed. We must also cut off the coarse skin. If the zucchini is young, you don't need to. Cut the prepared zucchini into large cubes.

Pour the specified amount of water into a saucepan and add granulated sugar. Bring the syrup to a boil.

Put cherry plum and zucchini pieces in clean jars. Fill them with boiling syrup and immediately roll them up with clean dry lids. We turn the cans upside down to check the tightness, wrap them with a blanket and in this state let them cool completely. Store the cooled compote in a cool dark place for no more than one year.
