Meadow strawberry compote

Meadow strawberries differ from forest strawberries in their round shape, and they are somewhat different in taste and aroma. The berry of meadow strawberry is rather dry, and the compote is the most delicious from it.

Sort the meadow strawberries and remove the sepals. Then transfer them to a colander and rinse gently with running water. Leave the berries for a while to drain the water well.

During this time, boil clean water in a separate saucepan. Pour the calculated amount of sugar on it and stir to dissolve the sugar completely. Cook the sugar syrup over low heat for 5 minutes.

Put the washed berries in clean jars and fill them with the prepared syrup. Cover the jars with lids and leave them for 3-4 hours to infuse.

After this time, pour the syrup from the jars into the same saucepan, add the lemon and boil the syrup again.
