Raspberry and red currant compote in a 3 liter jar for the winter

As an alternative to the previous compote, feel free to try this option. Red currants have a more neutral taste, which is successfully replaced by citric acid. In turn, it adds not only a slight sourness to the drink, but also provides it with long-term storage.

Ingredients

Cooking process

step 1 out of 5
The more attention we pay to the berries, the tastier the compote will turn out. For cooking, we need to sort out the raspberries, if desired, you can soak them. Then we rinse them several times and leave them in a colander so that all excess liquid drains from them.
step 2 out of 5
We do not neglect the preparation of currants. Berries can either be removed from the branches or left on them. The main thing is that they must be thoroughly rinsed and dried.
step 3 out of 5
While the berries are drying, you can prepare the jars. For this, we wash the containers with soda and sterilize them together with the lids. Choose any method you like. Then put the currants on the bottom of the prepared jars, and then the raspberries. Fill the berries with boiling water and leave to warm for 10 minutes.
step 4 out of 5
After this time, pour the water into the saucepan and add sugar to it. Stir everything well and send it to a small fire. Boil the sugar syrup for about 3-4 minutes. Then immediately turn it off and add citric acid to it.
step 5 out of 5
We return the finished sugar syrup, based on the berry broth, to the jars to the berries and roll them up with sterile lids. After that, cover the filled jars with a lid and put them in a saucepan with boiling water. This sterilization process will take about 15 minutes. After this time, seal the finished compote, turn it over and cover it with a blanket. We leave it like this until it cools completely and only then we rearrange it to a cool place.
We wish you bon appetite!
