Cloudberry for our latitudes is a very rare berry, but whoever has the opportunity to prepare it for the winter, make compote from it or freeze it. Compote is obtained with an incredible taste and aroma, and besides, it contains a lot of antioxidants with vitamins, which are preserved during canning. Such compote is easy to prepare and can be stored perfectly even for more than a year.

For compote, you need to choose only ripe berries of a bright yellow-orange color, then the compote will turn out to be especially tasty.

Then carefully sort the berries and remove damaged and dry specimens. Carefully separate the berry from the sepals. They can be dried to make medicinal tea.

Rinse the berries a little in a bowl and discard in a colander to drain off excess liquid.

Thoroughly wash and sterilize the 3-liter jar in any way. Transfer the prepared berry to the jar. Filling the jar with berries is standard - 1/3 of the volume. In a separate saucepan, boil the syrup from the amount of water and sugar specified in the recipe. Pour cloudberries in a jar with boiling syrup and immediately roll up with a boiled lid.

Then cover the jars with compote for 10 hours with any "fur coat". Cloudberry compote is ready. Store cloudberry compote only in a cool, dark place. You can diversify the taste of such a compote with another berry and, instead of sugar, prepare a compote with honey.
