Nectarine compote with citric acid for the winter

The chopped nectarines are poured over with boiling water and left for 5 minutes. This is repeated two more times, after which the liquid is poured into the pan. Sugar, citric acid are added there and everything is brought to a boil. The syrup is poured into jars and the compote is rolled up.

To begin with, we sterilize the jars in any convenient way, and boil the lids in water. We wash the nectarines thoroughly under running water and dry them with a paper towel. Cut the fruit in half and remove the seeds from them. We transfer them to banks.

Boil water in a saucepan and fill the jars with nectarines to the brim. Cover with a tin lid and leave for 5 minutes. Pour the remaining water into the pan.

After the right time, pour all the liquid back into the pan using the lid with holes. We put on fire, bring to a boil and repeat the previous step two more times. During boiling, the jars should be covered with lids.

Before the last pouring, add granulated sugar and citric acid to the pan. Mix well, put on fire and bring to a boil. Cook for a couple of minutes until the sugar is completely dissolved. Pour the resulting syrup into jars of nectarines.

We roll up the compote with sterile lids, turn it upside down, wrap it in a towel or blanket and leave it overnight until it cools completely.
