Nectarine and apricot compote for the winter

The easiest way to prepare nectarines and apricots for the winter is to roll up the compote. For an additional flavoring note, we suggest adding a little more pear. The drink has a rich fruity taste, it turns out transparent and light.

Wash nectarines, apricots and pears thoroughly with warm water and dry. Be sure to remove stalks from all fruits. Cut the pears into quarters and cut out the seeds.

We wash and sterilize jars and lids in any way possible. We put nectarines, apricots and pears in jars.

Bring water to a boil and pour it into jars with laid fruits. Cover the jars with lids and leave to steam for fifteen to twenty minutes.

Then pour the hot infusion into a saucepan, add sugar and bring to a boil again.

Pour boiling syrup into jars of steamed fruits, tighten the lids tightly. We turn the jars with compote upside down to check the tightness.

We wrap them in a blanket and leave to cool slowly. After cooling, we remove the seams for storage in a dark, cool place.
