A fragrant and tasty compote from nectarines has long become one of the favorite preparations for the winter in many families. When prepared in liter jars, and they are completely filled with this fruit, more nectarine is obtained in sugar syrup than compote, and when served, it is simply diluted with water. The nectarine compote is perfectly stored with full preservation of its organoleptic properties even for 2 years. For such jars, small fruits are chosen and, of course, ripe and high-quality. Compote is prepared without sterilization and with 2-fold filling.

Rinse the nectarines selected for this preparation thoroughly under running water and transfer to a colander so that all the liquid is glass. You can dry the fruit with a napkin. Nectarines have a very delicate rind, so they are not removed.

Rinse and sterilize liter jars for compote in a way convenient for you. Be sure to boil the lids.

Place the prepared nectarines in jars. They, if desired, can be cut into halves, pitted and laid with a cut down.

Pour boiling water over the fruits. Cover the jars with lids and leave for 15 minutes to infuse. After this time, pour the water from the jars into a saucepan and boil the syrup in it from the calculated amount of sugar. Pour boiling syrup into jars, filling them to the very top, and immediately seal tightly with lids.

Then cool the jars with nectarine compote for 10-12 hours upside down and under a warm blanket. Nectarine compote in 1-liter jars is ready. You can store it in any dark and cool place.
