Nectarine compote in a 3 liter jar without sterilization

The nectarines are put into a jar, filled with boiling water and left for 20 minutes. Then all the liquid is poured into a saucepan, sugar and citric acid are added to it. Fruits are poured with ready-made syrup and the compote is rolled up.

First, we prepare the banks. We rinse them thoroughly under hot water and sterilize in any convenient way. We wash the nectarines well under running water and dry them with a towel. Then we cut it in half, remove the bones and cut them into several more pieces.

Put chopped nectarines in sterilized jars and fill them with boiling water to the very neck. We cover everything with sterile lids and leave for 20 minutes to make a broth.

After this time, pour all the liquid into a saucepan.

Add granulated sugar there, mix and put on fire. Bring to a boil, lower the temperature and cook for another 5 minutes, until the sugar is completely dissolved.

Pour the resulting syrup into jars of nectarines and add citric acid to each. Close everything tightly with lids and turn it upside down. We wrap it in a towel or blanket and leave it overnight until it cools completely. We store the compote at room temperature in a dark, cool place.
