Nectarine compote in a 3-liter jar for the winter

Nectarine is a special kind of peach with a pronounced sweetness and without a fluff on the surface, which allows you to prepare a tasty, aromatic and healthy (due to the large amount of vitamins and fiber) compote from it for the winter. For compote, choose only undamaged fruits, they are thoroughly washed and the jars are sterilized, because the compote is prepared without sterilization. The number of fruits per can is chosen at your own discretion.

First, prepare the compote jars. Wash them with baking soda or laundry soap until the glass squeaks. Then sterilize the cans in any way. You can pour them 1/3 boiling water and leave for a few minutes, only then drain the water and put the jars upside down to drain all the liquid.

Boil metal lids or pour boiling water for 5 minutes.

Selected nectarines for compote, ripe and without damage, pour cold water for 5-10 minutes, and then rinse them thoroughly.

Then cut them in half and remove the pits, although whole fruits can be used.

Place the halves of the nectarines in prepared 3-liter jars.

Then pour 250 g of granulated sugar into each jar. If your nectarines are not sweet enough, then increase the amount of sugar to 300 g.

Put 2 cups of lemon or ½ teaspoon each in jars. citric acid.

In a saucepan, boil clean drinking water, calculated for the number of cans, because the quality of water is important for compote.

Then, carefully and in portions with boiling water, so that the glass of the jars does not burst, pour the halves of the nectarines with sugar, filling the jars to the top of the neck, even so that the water slightly overflows from the jar.

Roll up the jars immediately with sterile lids. Check the tightness of the seaming.

Then put the jars on the lids and cover them for at least 12 hours with any "fur coat". Nectarine compote is ready. Store it in a cool, dark place, basement or closet.
