Sea buckthorn compote without sterilization for the winter

Bright amber color, with a characteristic sourness and specific sea buckthorn taste, this compote will appeal not only to sea buckthorn lovers, but will also become a pleasant taste discovery for those who are not yet familiar with this berry. The drink turns out to be rich, it can be used both chilled and diluted, and hot, as a base for sea buckthorn tea.

We sort out the sea buckthorn, trying to remove the remaining stalks. We measure out the required amount of granulated sugar.

Place the prepared berries in a colander and rinse under warm running water. Let the moisture drain.

We wash and sterilize jars and lids in any way possible. We put prepared clean sea buckthorn in jars.

Bring water in the specified amount to a boil. Pour boiling water over the berries in jars. Cover with lids and let it steam for ten minutes.

After that, pour the hot sea buckthorn infusion into a saucepan, add sugar, bring to an active boil and pour the sea buckthorn in jars with the resulting boiling syrup.

Tightly tighten the jars with compote with lids and turn them upside down to check the tightness.

We wrap it in a warm blanket and leave to cool slowly. After cooling, we remove the seams for storage in a dark, cool place.
