To begin with, we start processing peaches for future compote. We wash the fruit in warm water. We spread the towel on the table and put the peaches on it. We leave them to dry. At this time, fill the pan with a little water. Wait for it to boil. Transfer the peaches to a colander. Scald them with boiling water. Place the peaches under cold water to cool them slightly. Peel them off. Now we need to get the seeds out of the peaches. Cut the fruit in half. Remove the pit from the peach. Then you can cut it into smaller pieces. However, this is optional.
Let's start sterilizing the cans. First, we need to rinse them well in warm water with soda or ordinary detergent. Scald the jars and lids with boiling water. Then fill a small kettle with cold water and place it on the stove. Wait until the water starts to boil and when steam starts to come out of the spout of the kettle. Place the jar on its spout. Leave it in this position for about 5 minutes. Then move the jar onto a towel and let it dry.
To make sugar syrup, we need sugar, vanilla sugar, citric acid and water. Fill a pot with water. Put it on fire. When the water begins to boil, start gradually, adding sugar in small portions. Stir the syrup constantly to dissolve the crystals quickly. Add 2 tablespoons vanilla sugar to a saucepan. Stir the solution again. Add citric acid as the last ingredient, thanks to which the compote can definitely stand for a long time. When the syrup is completely ready, strain it with a sieve or regular cheesecloth.
Fill the jars with peaches. Pour the prepared sugar syrup over them. You can add additional ingredients to the compote. For example, lemon, which will add a little sourness to the taste of the drink. Cover the jar with a lid. Place the jar in a pot filled with water. Transfer it to a saucepan. When the water boils, reduce the heat. Keep the jar in this position for 25-30 minutes. Then screw the caps back on. Turn the jars over and place them on a towel. Roll them up in a warm blanket. Wait for the jars to cool completely. Then move them to a cool place where they can stay until winter.
