If you cannot spend a lot of time cooking, but you want to pamper yourself and your family with something unusual and tasty, pay attention to this recipe. The cooking process is very simple. And the final result will pleasantly surprise you with its taste.

Be very responsible when choosing peaches for your compote. Be sure to inspect the product so as not to buy spoiled fruit. It is not recommended to buy very soft peaches, as such fruits are already stale. Rinse peaches several times before cooking. You can wash them with soap to accurately remove various impurities from their surface. Then spread them out on a kitchen towel. While the peaches are drying, place a pot of water on the stove. Wait for the water to boil. Then transfer the peaches to a colander and scald with boiling water. Cool the fruit under cold water and peel it off. Then cut the peaches in half and remove the pits. Set the fruit aside.
To save our time, we will not sterilize the jar. To get started, just rinse it with baking soda or regular detergent. After that, put the water to boil. Scald the jar and lid with boiling water. Spread a tea towel on the table and place the jar on it. Leave it to dry. Be sure to check that there is no dirt left on the jar.
Let's start making sugar syrup. First, fill the pot with cold water and move it over the fire. When the water boils, start adding granulated sugar. It is best to do this gradually. The amount of sugar can vary depending on your desire. If you want the compote to be more concentrated, add more granulated sugar. It is very important to stir the syrup well after each addition. When all the sugar crystals are dissolved, add 1 tablespoon of vanilla sugar to a saucepan and add the lemon zest. Boil the syrup for another 5-7 minutes. Then turn off the heat and leave the sugar solution on the stove for about 2-3 minutes. Strain the syrup using regular cheesecloth. Thanks to this, the compote will turn out to be very transparent and attractive in appearance.
Fill a jar with halved peaches. Pour sugar syrup over them. Make sure the jar is warm. Otherwise, the glass may crack and you will have to look for a new container for the compote. Spread a towel on the table and place the jar on it so that it sits on top of the lid. Thanks to the hot compote, the lid will be heat treated. Wrap the jar in a warm blanket or towel. When the jar is completely cool, you can move it to a cool place. There, the compote can last until winter.
