Peach and apricot compote for the winter

Peach compote is often supplemented with various berries and fruits, including apricots, because these fruits ripen almost simultaneously. By combining peaches with these additives in different ratios, you will always have a new taste of the drink, and the fruit from the compote is very tasty. Peach and apricot are very similar, but in the mixed they give the compote a richer taste and aroma. Such a compote is prepared by the method of double filling and without sterilization.

Rinse dense ripe apricots selected for compote under running water, cut into halves along the groove and remove the pit.

Prepare the peaches in the same way, only cut the halves of the peaches into medium slices.

After this time, pour the water from the jar through a special lid back into the pan, add the amount of sugar indicated in the recipe, mix and boil the syrup for 3 minutes. At the end of cooking, dissolve a pinch of citric acid in the syrup.

Pour the pieces of peaches and apricots into a jar with hot syrup and immediately seal it tightly. Put the jar on the lid, cover with a warm blanket and leave to cool completely. Your peach and apricot compote is ready. Transfer it to a cool, dark place for storage.
