In the peach season, it will be a big mistake not to prepare a couple of jars of sweet and aromatic compote for the winter. This recipe will help you do this very quickly. It does not use any special ingredients, and the necessary products can be found in any store.

Wash peaches and plums well in warm water. It is advisable to use soap for this in order to accurately remove all dirt from the surface of the fruit. Fill a pot with a little water and transfer it to the stove top. Wait for the water to boil. Transfer plums and peaches to a colander. Scald the fruit. Then, peel the peaches. Cut them in half and remove the bones. Do the same with plums. Set the prepared fruit aside.

To speed up the cooking process, you can refuse to sterilize cans for future compote. However, it is recommended not to skip this step. Rinse the jars in warm water. Scald them with boiling water along with the lids. Now we need to steam sterilize the cans. To do this, you can use a kettle or a regular saucepan. Place the jar in such a position that steam fills from the inside. Hold it like this for 2-3 minutes. Spread a large tea towel on the table. Transfer the jars to it and leave them to dry.

For compote, we need to prepare sugar syrup. Of course, you can save time and just pour boiling water over granulated sugar, but then your compote will not have such a rich and bright taste. Fill a small saucepan with water. Place it on the stove. When the water boils, start gradually, adding sugar to it in small portions. Stir the syrup well after each addition to dissolve the crystals quickly. Add half a teaspoon of citric acid to the sugar solution. Stir the resulting solution well. Thanks to citric acid, your compote will be able to stand for a very long time. The finished syrup must be filtered. To do this, you can use a sieve or gauze.

Transfer the sliced ​​fruit to the jars. Pour the prepared sugar syrup over the peaches and plums. Place a lid on each jar. Transfer the jar to a small saucepan that must be filled with water beforehand. Turn on the fire and wait for the water to boil. Then reduce heat to low. Keep the jar in this position for 20-25 minutes. After that, move it to the table, screw on the lid. Turn the jar over and place it on a towel. In this position, the lid will undergo additional heat treatment. Wrap the jar in a warm towel. Wait for it to cool completely. Then move it to the coolest, driest place in your home.
