We start with the preparation by processing the fruit. First, wash the peaches and apples in warm water. We spread them on a towel and leave to dry. Fill the pot with water and place it on the stove. Wait for it to boil. Transfer the peaches to a colander and scald them. Then peel them off. You can also use a knife to peel the peaches. Cut them in half and remove the bones. Set the peaches aside. You do not need to peel the apples. Cut them into four pieces and remove the seeds. After that, you can cut the apples into smaller pieces.

We begin to sterilize the jars. Rinse them well in warm water along with the lids. Put a saucepan full of water on the fire. Wait for its contents to boil. Scald the jars and lids with boiling water. For additional sterilization, fill the kettle with water. Transfer it to the stove. When the water starts to boil, place the jar on the spout of the kettle so that it fills with steam. Add 4 tablespoons vanilla sugar to a saucepan. They will give our compote a pleasant and sweet smell. Stir the syrup well. The last ingredient is to send a few pinches of citric acid to the pan. Thanks to her, you can be sure that your compote will survive the most severe winter. Strain the finished syrup. To do this, you can use a sieve or regular cheesecloth.

Fill sterilized jars with peaches and apples. Pour the sugar syrup over the fruit. After that, cover the jar with a lid and transfer it to a pot filled with water.
