For compote, we need to choose the densest peaches. You can even use slightly unripe fruits. Rinse peaches and oranges well in warm water. Fill a saucepan with a little water. Place it on the stove and wait for the water to boil. Scald fruits with boiling water. Transfer the peaches to a colander and place them under cold water. Peel the fruit. Cut the peaches in half and remove the seeds. Cut the oranges into half rings. Set aside the finished fruit.
For compote, we need to sterilize the jars well. First, we wash them under warm water. To do this, you can use baking soda or regular detergent. Then fill the pot with a little water and transfer it to the stove. Wait for the water to boil. Scald the jars and lids with boiling water that you will use to tighten them. After that, we need to sterilize the cans with steam. To do this, you can use a regular pot of water. We need to position the can so that it is filled with steam. Keep it in this position for 5 minutes. Then move the jar onto a towel and let it dry.
To make sugar syrup, we need water, sugar, vanilla sugar, and citric acid. Fill the pot with cold water. We put it on fire. When the water begins to boil, gradually add granulated sugar to it. Stir the syrup constantly to dissolve the crystals quickly. Place 1 tablespoon of vanilla sugar in a saucepan. This ingredient will give the compote a very pleasant and sweet aroma. Stir the syrup well. Add half a teaspoon of citric acid to it. Stir the sugar solution again. Thanks to citric acid, your compote will definitely stand up to winter and will not spoil. When the syrup is done, turn off the heat and remove the saucepan from the stove. Strain it through a sieve or regular cheesecloth. Thanks to this, the compote will be transparent.
Transfer the peaches and oranges to the jar. Gently pour the hot syrup over the fruit. Make sure that no cracks appear on the glass. Place the lid on the jar and screw it back on. Turn the jar over and place it on a kitchen towel, which should be spread out on a flat surface in advance. Thanks to the hot compote, the lid is subjected to additional heat treatment. Wrap the jar in a warm blanket. Wait for it to cool completely. Then you can move it to any cool, dry place in your home.
