Peach compote with orange and lemon for the winter

Citrus fruits (orange and lemon) give the usual peach compote a new rich taste, and, with their sourness and aroma, reduce the excessive sugaryness of such compote and make it similar to the well-known Fantu drink, only without soda. Peaches are chosen ripe and dense, and citrus fruits are used instead of zest. The compote is prepared by the double pouring method.

Rinse the peaches well under running water and cut them in half along the groove, then remove the seeds. Rinse the oranges and lemons thoroughly and with a brush. Then cut them into circles of medium thickness.

Wash the jars with baking soda and sterilize in advance in a way convenient for you. In each jar, place peach halves, at least 0.5 kg per 3 liter jar, and add circles of citrus fruits to them.

Boil clean water based on the number of cans. Then pour boiling water over the fruits in jars, cover them with boiled lids and leave for 30-40 minutes. You can cover the cans for this time with a terry towel.

After this time, pour hot water from the cans through a special lid into a separate saucepan. Pour the calculated amount of sugar into this water and boil the syrup. Add a little more water to the pan, as some of the liquid is usually absorbed by the fruit. Boil the syrup for 2-3 minutes over low heat.

Then refill the jars with hot syrup, filling them all the way to the top.

Immediately seal the compote in jars hermetically. Then put the cans of compote on the lids, wrap them with a warm blanket and leave to cool overnight. Peach compote with orange and lemon is ready. Store it in a cool, dark place.
