First, we need to prepare the peaches. We wash them several times under warm water. To accurately remove all dirt from the surface of the fruit, you can wash it with soap. Then wipe the peaches off with a tea towel and set aside. Fill a small pot with water and place it on the stove. We are waiting for the water to boil. Scald peaches with boiling water. Then we transfer them to a colander and refrigerate. Remove the peel from the fruit. Put the finished peaches aside.

Let's start sterilizing the cans. First, rinse the soda cans. Scald the lids and set them aside. We fill the kettle with cold water and put it on fire. When steam starts to come out of its spout, place a can on it and hold it in this position for about 2-3 minutes. Then transfer it to a towel and leave to dry.

Let's move on to making sugar syrup. Fill a small saucepan with water and put it on fire. Wait for the water to boil. Gradually add granulated sugar to it, constantly stirring the solution. When all the sugar has dissolved, add 2 tablespoons of vanilla sugar to the syrup. Mix everything well again. Add citric acid last. Thanks to this ingredient, the compote will be stored much longer. When the syrup is done, turn off the heat and remove the saucepan from the stove. Now we need to filter it. You can use cheesecloth for this. Thanks to this, the compote will look much more attractive.

Divide the peeled peaches into the jars. Pour the sugar syrup over them and cover. Place a small cloth on the bottom of the pot. Put a jar on it and fill everything with a little water. Move the given structure to the slab. When the water starts to boil, reduce heat to low and sterilize the jar for another 20-25 minutes. After that, rearrange it not with a towel and screw the lid back on. Turn the jar over and place it on a towel. Thanks to the hot compote, the lid will undergo additional heat treatment. Wrap the jars in a blanket and wait for them to cool completely. Then take them to the driest, coolest place in your home.
