We start preparing compote with the preparation of fruit. We need to rinse the peaches well in warm water. Transfer the peaches to a colander and scald them with boiling water. Then place the fruit under cold water. Peel them off. Cut the peeled peaches in half. Remove the bones from them. Let's start making sugar syrup. Fill a pot with cold water and place it on the stove. Wait for the water to boil in it. Now you can start adding granulated sugar to it. It is recommended to do this gradually, in small portions. Stir the syrup well after each addition so that all crystals dissolve quickly. Add 2 tablespoons vanilla sugar to a saucepan. It will give compote a very pleasant sweet aroma. The last ingredient is citric acid. Pour it into the syrup and stir it well again. Thanks to her, your compote will definitely stand until winter and will not even think about spoiling. Pass the finished syrup through a sieve or cheesecloth. We transfer the peaches to prepared jars. Fill the fruit with sugar solution. Place the lids on the jars and screw them back on. Now we need to turn the cans over and place them on the towel.
