First, we need to prepare fruit for the future compote. We wash peaches and lemons with warm water. You can use soap to accurately remove any dirt from the surface of the fruit. Now we need to scald the peaches and lemons with boiling water. Then transfer the peaches to a colander. Rinse them with cold water. Peel the peaches. Cut the fruit in half and remove the seeds. You don't need to peel the lemon. Cut it into rings or half rings. Set the finished fruit aside.

Now we need to start sterilizing the cans. First, we wash them with baking soda or detergent. Fill a small saucepan with cold water. Place it on the stove. Wait for the water to boil. Scald the jars and lids with boiling water. Now we need to sterilize them with steam. To do this, you can use a regular pot or kettle. Fill the kettle with water and place it on the stove. When steam starts to come out of its spout, place the can on it so that it fills with steam. Keep it in this position for 5 minutes. Then remove the jar and place it on a towel. You do not need to wipe the jar, as it will dry quickly by itself.

Let's move on to making sugar syrup. Fill the pot with cold water. We put it on the stove. Wait for the water to boil. Reduce heat and start gradually, add sugar to it in small portions. Stir the syrup constantly. As a result, all granulated sugar should completely dissolve. Add vanilla sugar to the syrup. Thanks to this ingredient, the compote will have a sweet and pleasant aroma. Add half a teaspoon of citric acid to the syrup. Thanks to this ingredient, the compote will be able to stand for a long time. Strain the finished syrup using a sieve or regular cheesecloth.

Transfer the fruit to jars. Pour the prepared sugar syrup over them. Place the lid on the jar and roll it up. Turn the jar over and place it on a tea towel to spread out beforehand. Make sure that no cracks appear on the jar. Wrap it in a warm blanket or plain towel. Wait for the jar to cool completely. Then you can move it to any cool, dry place in your home.
