Ranetki compote with citric acid for the winter

A simple and quick recipe for a refreshing compote from the simplest ingredients: apples, granulated sugar and a pinch of lemon. Perfectly stored in the cellar for up to two years, the cans never swell or explode. The taste and aroma are very rich in apple notes, and the apples themselves are almost indistinguishable from fresh fruits.

Rinse the apples thoroughly under running water or in a large saucepan, leaving the stalks. We lay out clean fruits in jars, which should be washed in advance with a solution of soda and doused with boiling water.

In a container with a thick bottom, pour a little more than two and a half liters of water, add cherry leaves to taste and bring to a boil over high heat. With the appearance of the first signs of boiling, add half a kilogram of granulated sugar, mix thoroughly. We reduce the flame and continue cooking the syrup for 25-30 minutes.

Pour the ready-made syrup into jars with ranetki and add citric acid on top (as a rule, it is enough at the tip of a knife).

At the bottom of an enameled basin or a saucepan, we cover a thick cloth, put jars covered with lids on it, and boil for about 20 minutes, thereby sterilizing practically the finished compote.
