Because yellow plums tend to have a sweet honey flavor, they can be canned without adding sugar. To do this, you need to blanch them in boiling water for several minutes, then roll them up. This method of preservation is convenient because the sugar-free compote can be consumed by both children and people who adhere to proper nutrition or those who do not consume sugar. In any case, sugar or its substitute can always be added after opening the jar of compote.

For the preparation of compote, we need dense yellow plums. Since during the cooking process we will boil them in boiling water, we need them to retain their shape, so it is possible for them to be a little unripe.

We wash the plums in warm running water, put them on a kitchen towel and let them dry a little.

Put a deep pot of water on the fire, bring to a boil and put plums in boiling water. Blanch them in boiling water for 2-3 minutes.

After the plums have boiled a little in the water, use a slotted spoon to take them out of the pan and carefully place them in a sterilized jar, without removing the water from the heat. Cover the jar with a boiled lid and boil water for another 3-4 minutes, in which the plums were boiled over medium heat. Then fill the plums with hot water and seal the jar tightly with a lid. Turn the jar with compote upside down and leave to cool completely at room temperature.

We store the finished compote in a dark, cool place, where it can be stored for several months. Since we rolled the plum with a stone, it is not recommended to store the compote for more than 4-5 months.
