Everything is elementary simple and fast! Since plums are harvested without pits, the compote can be stored on your shelves in the pantry for a long time, and you do not have to worry about its quality. Another advantage - preservation in liter jars - is very convenient when you have a small family, or when the compote needs to be stored in the refrigerator after opening, and it is more convenient to do this in a small container.

We wash the dense ripe plums in warm running water, put them in a colander so that they drain a little from the water. Then we cut each plum in half lengthwise and remove the seeds. We put the plums in a heat-resistant container and scald with boiling water, leave for 1-2 minutes. Then drain the boiling water.

We wash the compote jars with baking soda, rinse well with water and sterilize over steam for 8-10 minutes. Then carefully remove the cans with a grip and leave to cool. You can boil the lids in the same water.

Pour water into a saucepan, put on fire and bring to a boil. After the water boils, pour sugar into it, stir and simmer for 3-5 minutes over low heat.

Put prepared plums in sterilized jars, fill them with hot syrup and tightly tighten the jars with lids. We turn the jars with compote upside down, check the tightness, then cover with a warm blanket or a terry towel and leave to cool completely at room temperature. Then we put the compote for storage in a dark, cool place, where it can be stored for a year.
