Plum compote without sterilization for the winter

A good harvest of plums in your garden is an excellent reason to fully prepare them for the winter. There are a lot of options for preparing them, but we will focus on the simplest and fastest - compote. We will add a large amount of plums to the jar to make the drink rich and aromatic. We will use ready-made compote plums as a filling in homemade cakes. That is, having rolled up a jar of compote, we get 2 in 1: a delicious drink and filling - very convenient and profitable!

We carefully sort the plums and select hard ripe fruits. Remove the stalks and rinse the plums in warm running water. Then we put them on a kitchen towel and leave for 10-15 minutes to dry from the water.

In each plum, with the help of a toothpick, we make several punctures - the compote will become more saturated from this, since the plums will give their juice better. We put the prepared plums in pre-sterilized jars. We use a lot of plums for compote, so the compote turns out to be rich and concentrated, and after opening the jar, we use plums for making homemade cakes.

Pour water for compote into a saucepan and put on fire. We use approximately 1.5 liters for one can. However, the amount of water depends on the number of drains in the jar. The unnecessary water can then be poured out. We bring the water to a boil and pour it into a jar with plums, we do it gradually, every minute and a half filling the jar with boiling water only by a third. Thus, the jar with plums will heat up gradually, and we will avoid a sharp temperature drop. Leave the plums to blanch in boiling water for 15-20 minutes.

After a while, we put on a special attachment on the jar, with the help of clamps or a kitchen towel, we lift the jar and drain the water back into the pan. Put it on the fire again and bring it to a boil and repeat the procedure again - pour boiling water over the plums and leave for 15-20 minutes, after which we pour the liquid into a saucepan and bring it to a boil.

Add sugar to the jar and pour boiling water to the very neck of the jar. We tightly seal the jar with compote with a boiled lid, turn it upside down and check for leaks.

We wrap a jar of compote with a warm blanket and leave to cool completely at room temperature. Then we store the finished compote in a dark, cool place.
