We offer you another option for preparing plum and pear compote - without sterilization. Due to the fact that fruits are boiled in sugar syrup for several minutes, they undergo heat treatment, which allows us to exclude the sterilization stage and get a tasty and rich compote in a matter of minutes. One and a half liter can of compote comes out of the specified number of ingredients.

We select solid plums so that they do not lose their shape during cooking when scalded with boiling water. We wash them in warm running water and put them on a kitchen towel so that they dry out a little. Then we cut them in half and remove the bones. We put the halves of the plums in a saucepan and scald with boiling water. The stage of pitting can be skipped, then it is recommended to store the compote for no more than 3-4 months.

We also choose dense pears for compote. We rinse them under running water and leave them on a kitchen towel for 5-10 minutes to drain the water. Then we cut the pears into four parts and remove the stem and core.

Pour water into a deep saucepan, place the prepared fruits in it and put on fire. Bring the compote to a boil, add sugar, mix and boil for about 4-5 minutes. Then add citric acid to the pan, mix again, boil for about 1 minute and remove from heat.

Pour the finished hot compote into a sterilized jar, seal it tightly with a lid, turn it upside down and leave it to cool completely at room temperature. Then we put it in a cool dark place for storage.
