Homemade compote is one of the simplest preparations for the winter. It does not take much time and effort to prepare it, and as a result you will get a delicious drink that will be much healthier and better quality than store drinks and juices. Prepared with your own hands with the addition of natural ingredients, it will serve as a source of vitamins and nutrients in the autumn-winter period, when the body needs immunity support so much.

For compote, we select ripe solid plums, you can use slightly unripe ones - this does not affect the taste of the compote at all, and when the plums are processed with boiling water, they will retain their shape. We wash them under a stream of warm running water, removing the stalks, and put them on a kitchen towel so that they dry from the water within 15-20 minutes.

We wash the compote jars with baking soda and rinse well with running water. We put the jars in a cold oven on the wire rack with the neck down and sterilize at 110-120 degrees for 8-10 minutes. Then we take out the hot jars with the help of the clamps from the oven onto the wire rack or stand and leave to cool slightly. Then we put the prepared plums in jars and fill them with boiling water. Cover the jars with boiled lids and leave the plums to blanch in boiling water for 15-20 minutes.

After the time has elapsed, remove the lids from the cans, put on the nozzle with holes and carefully drain the water back into the pan. During this time, she infused and acquired a beautiful pink color and a stunning plum aroma. Add sugar and a pinch of cinnamon to the water, mix and put on fire. Bring the syrup to a boil and pour it into jars.

We seal the jars tightly with lids, turn them upside down, check the tightness and cover them with a terry towel. After the compote has completely cooled down to room temperature, put it in a cool dark place for storage.
