Nowadays, compote rarely appears on the home table, because it has been undeservedly replaced with store-bought drinks, juices and frozen fruits. But there are housewives who delight their loved ones with natural and high-quality homemade compote, harvested in jars for the winter. A fragrant, tasty and beautiful version of this blank will be an assorted plum, apple and pear compote, it is only important to choose high-quality fruits for the compote. We prepare compote without sterilization, but the jars must be clean and sterilized.

For compote, choose whole, beautiful and defect-free plums, pears and apples.

Immediately measure the amount of sugar and clean drinking water calculated on the volume of the compote harvest.

Rinse the fruit well. For pears and apples, remove the seed pods and cut the fruit into slices of any size. To peel or not, decide at your own discretion, because there are varieties with a delicate peel. Leave the plum with the stone, which will give the compote a special taste.

Prepare 3-liter jars in advance: wash and sterilize in the oven or with hot steam. Boil the seaming caps. Put the prepared fruits in the jars in layers and in any order, filling them to half their volume.

Immediately pour a glass of granulated sugar into the jar with the fruits.

The amount of sugar can be changed depending on the sweetness of the fruit, but less than a glass is not poured into the compote, since sugar is also a preservative.

Boil clean water in a large saucepan. Then, carefully with boiling water so that the glass does not burst, pour the fruits in the jars, filling them above the top of the neck so that the water overflows. This is necessary to completely remove air from the workpiece.

Then check the tightness of the seaming, and turn the cans in your hands several times so that the sugar is well and all dissolves.

Then put the jars on the lids and cover tightly with any "fur coat" for a day. Transfer the cooled compote from plums, pears and apples to storage in a dark, cool place.
