Grape compote without sterilization in liter jars for the winter

Cooking compote without sterilization does not mean at all that raw fruits are rolled up in jars. It is important to neutralize the live yeast that is on the surface of the berries and not to add other microbes to the compote, then the drink will be successful. This compote is tastier, because the grapes are not cooked, but infused in sugar syrup. Different grapes are suitable for compote, and it is placed, focusing on the volume of the can (1/3 can), since different varieties have different weights. Cooking in liter jars using the double pouring method.

Rinse the grape brushes thoroughly under running water. Then carefully, so as not to damage, separate the berries from the branch and immediately remove the damaged fruits.

Do the same with grapes of a different color. They can be mixed in the same jar or cooked separately, as you prefer.

Rinse liter jars well in advance and sterilize in any way. Boil the lids. Put the prepared grapes in jars, filling them at least 1/3 of the volume.

Pour the calculated amount of sugar into the jars to the grapes.

In a saucepan, bring clean water to a boil and pour boiling water over the berries. Then cover the jars with lids and leave for 15 minutes to infuse.

After 15 minutes, drain the water from the cans through a special lid into the same saucepan. If you cook grapes of two colors in different jars, then pour the water into two pots. Boil the syrup for a couple of minutes.

Then re-pour the grapes in the jars with boiling syrup and immediately roll them up with lids. Check the tightness of the seaming.

Put the jars on the lids and cover tightly with a terry towel for a day.
