Grape compote for the winter can be prepared from various grape varieties, but the most widespread and demanded is "Isabella". The berries are not separated from the branches, which gives the compote a pleasant taste and astringency from the tannins contained in the branch. It is not possible to thoroughly rinse the grapes with twigs, so the compote is prepared with sterilization.

First sort the grapes and remove small debris and damaged berries. Then rinse it well under running water. You can pour cold water over the grapes in advance for 1 hour, and during this time all the garbage will float up on its own.

Just rinse compote jars well with detergent or baking soda. In 2 pans (one for compote and the other for sterilization) immediately put water for heating. Put clean bunches of "Isabella" in prepared 3-liter jars, filling them to a third of the volume. You can put more grapes so that the taste of the compote is richer.

Then pour the amount of sugar indicated in the recipe into each jar to the grapes. Pour boiling water over the grapes in jars, filling them to the top. Cover the jars with sealed lids.

Then sterilize them one at a time in a large saucepan of heated water. The sterilization time is standard - 20 minutes from the beginning of boiling of water in a saucepan.

At the end of the sterilization time, roll up the jars with the lids and check the sealing tightness. Then place them on the lids and cover with a terry towel until they are completely cooled. Grape compote with twigs keeps well in any dark place for a long time.
