Cherry compote with cinnamon

Cherries go well with various warming spices like saffron, cloves, cinnamon. Cinnamon softens the sharp cherry taste in the compote and gives it a unique aroma.

Sort the cherries, wash well in a sieve or colander.

Arrange the berries in jars. Add cinnamon. Bring the water to a boil and pour the jars up to the neck. Leave on for 10 minutes.

Drain the water from the cherries back into the pan, leave the berries in the jars. Pour another 100 ml of water into the compote to supplement the boiled one. Bring to a boil and add sugar. Bring to a boil again, stirring occasionally. When the sugar has dissolved, the syrup can be poured back into the jars.

Roll up jars of cherry compote with sterile lids. Turn the container upside down, wrap it in a warm blanket and leave to cool for 12-18 hours.
