When you have a good harvest of cherries and you need to quickly prepare them for the winter and process them in considerable quantities, you can make a cherry compote with seeds without sterilization and in 3-liter jars using the proposed recipe. We prepare compote using the double pouring method, because many do not like to sterilize compotes, and it takes more time. Moderately sweet and aromatic compote will keep well throughout the year.

First of all, prepare the cherries for conservation, because the taste of the compote and the reliability of storage largely depend on this. Remove the damaged fruits, then carefully remove the stalks from the berries and rinse the cherries well in cold water. Rinse the jar with baking soda. You do not need to sterilize it. Boil the lid. Pour pure cherries into a jar, filling it no more than 1/3 of its volume.
