Cherry compote with mint for the winter

Cherries are quite a perishable berry, so if you have already eaten them to the dump, it's time to harvest for the winter. A delicious refreshing compote can be made with cherries and mint.

Boil 2.5 liters of water in a saucepan. During this time, sort out the cherries, get rid of the tails and leaves, wash thoroughly.

Wash and sterilize a three-liter jar, put the berries in it. Pour boiling water over the cherries, let sit for 15 minutes, then drain the water back into the saucepan.

Wash the mint, cut into thin strips.

Boil compote syrup, add sugar and citric acid to a saucepan, cook until boiling. When the syrup boils, add the mint. Pour the syrup over the berries, roll up with a sterilized lid, turn the jar upside down and leave to cool.
